I have a boat with a gasoline engine (chevy 350) I would like to do something about reducing sound at higher rpm. Insulating the engine compartment is relatively easy to do for all thicknesses of material, my question is, should I consider anyhting less than 2" thickness?

Sure, but while it would be cheaper, it won't be as effective.
