2 rooms within a room - brick ?

Im hoping to build 2-3 “rooms within a room” and looking for the most effective way to do this (band practice + more).

The building is a small warehouse made of brick with an iron roof, concrete floor. Is the easiest & most effective way to build these rooms from brick? I was thinking about 3-4 feet apart.

If so, is single row brick enough, or should I build with double brick?

What suggestions for the ceilings of these rooms?

Regarding sound absorption, would rockwool on the inside be ok with some fabric over the top, or is there a better solution?

Any advise welcome, if im going to the effort of 2-3 rooms I need to do this right.
