I do construction for a living and I agree, you should ideally tear off the old drywall, do some 'remedial' sealing and upgrade the wall, if you can.  But sometimes it's not possible, i.e. condo.  In that case, if you can get some insulation in the cavities (these days, a good insulation contractor can blow in fiberglass - cellulose is less effective) Quietrock and Green Glue will give some good results - almost STC 50. If you can afford it, put up a second panel for even more sound deadening.

Quiet rock is ok for stc - it does nothing for low frequency (100hz and below) blocking.  If you must use it then damp it with green glue - 3 tubes per sheet (maximum use) works best.
